From November 19, 2019 to August 19, 2020
Nellie Francezon, a RFI-Food for Tomorrow international postdoctoral research fellow, is currently doing a one-year secondment at Université Laval, Québec. Welcomed in Prof. Lucie Beaulieu’s team, within the Institute of Nutrition and Functional Foods (INAF), she continues working on Bluedimary, a collaborative research project involving Le Mans Université (France) and Université Laval (Quebec, Canada). After studying marennine, from its chemical structure to its redox properties, Nellie is investigating the bioactive molecules in the biomass of Haslea ostrearia. Extracts enriched in proteins and carbohydrates are studied from an analytical point of view and tested for their antimicrobial and antioxidant bioactivities for food application.
